French fried potato pancakes

Crispy on the outside, soft on the inside, potato pancakes are irresistible.

Ingredients

  • 4 medium potatoes
  • 1 small onion, finely chopped
  • 1 egg
  • 1/4 cup wheat flour
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • Vegetable oil for frying

Preparation

  1. Wash the potatoes and cook them for 15 minutes.
  2. Let the potatoes cool and remove the skins.
  3. In a large bowl mash the potatoes and mix with the chopped onion, egg, flour, salt and pepper.
  4. Take portions of the mixture and form pancakes of the desired size.
  5. In a large skillet heat enough vegetable oil to cover the bottom over medium-high heat.
  6. When the oil is hot, carefully place the potato pancakes in the pan without crowding them.
  7. Cook the potato pancakes for about 3-4 minutes on each side.
  8. Place the pancakes on a plate lined with paper towels to remove excess fat.
  9. You can serve the potato pancakes with tomato sauce, sour cream, guacamole or your favorite salsa.

Ingredients

  • 4 medium Selma Farms® Chipping Frying Potatoes, peeled and cut into small cubes
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder (optional, for a spicy kick)
  • Salt and pepper to taste
  • Vegetable oil for cooking
  • 12 corn tortillas
  • Toothpicks
  • Vegetable oil for frying
  • Chopped lettuce
  • Tomato
  • Grated cheese
  • Sour cream
  • Salsa (such as salsa roja, salsa verde or guacamole)

Preparation

  1. In a large pot, boil the potatoes in salted water for about 10-15 minutes until tender.
  2. Drain the potatoes and let them cool slightly.
  3. In a large skillet, heat a little oil over medium heat, add the chopped onion, chopped garlic and cook until tender and fragrant.
  4. Add the cooked potatoes, cumin, chili powder, salt and pepper, cook together for about 5 minutes, lightly mash some potatoes with a fork to give texture.
  5. Place about 2 tablespoons of the potato mixture in the center of each tortilla.
  6. Roll up each tortilla and secure it with a toothpick at the end so it doesn’t split open when frying.
  7. In a large skillet, heat enough vegetable oil to submerge the tacos.
  8. When the oil is hot (approximately 180° C or 350° F), add the browned tacos.
  9. Fry until golden brown and crispy.
  10. Remove the browned tacos with a skimmer and place them on absorbent paper towels to remove excess oil.
  11. Serve the potato tacos dorados with chopped lettuce, tomato, grated cheese, sour cream and sauces to taste.

  • 4 Selma Farms® Chipping Potatoes for Frying
  • Vegetable oil for frying
  • Salt to taste

Preparation

  1. Peel and cut into thin, uniform strips, about 1 centimeter wide, you can leave the skin on if you prefer potatoes with more texture.
  2. Soak the potatoes for 30 minutes, drain and pat dry with paper towels to make the potatoes crispier when frying.
  3. In a deep fryer or deep fryer1 heat enough vegetable oil over medium-high heat, it should be enough to submerge the potatoes.
  4. When the oil is hot (about 175-190°C or 350-375°F), add a handful of potato strips into the hot oil.
  5. Fry the potatoes in small portions so that they cook evenly.
  6. Fry the potatoes for about 3-4 minutes or until golden brown and crispy.
  7. Place them on a plate with paper towels to remove excess oil.
  8. Sprinkle with salt to taste.

Preparation

  2. Let stand in cold water for 30 minutes or more to ensure crispy fries.
  3. Pat dry with kitchen paper and let stand for a few minutes.
  4. Heat the oil in a deep frying pan or deep fryer until it reaches 175° C.
  5. Add the potatoes to the frying pan or deep fryer a little at a time and fry for 2-3 minutes.
  6. Place the potatoes on absorbent kitchen paper to remove excess fat.
  7. Add salt and seasoning to taste.
