Ingredients
- 4 medium Selma Farms® Chipping Frying Potatoes, peeled and cut into small cubes
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder (optional, for a spicy kick)
- Salt and pepper to taste
- Vegetable oil for cooking
- 12 corn tortillas
- Toothpicks
- Vegetable oil for frying
- Chopped lettuce
- Tomato
- Grated cheese
- Sour cream
- Salsa (such as salsa roja, salsa verde or guacamole)
Preparation

In a large pot, boil the potatoes in salted water for about 10-15 minutes until tender.

Drain the potatoes and let them cool slightly.

In a large skillet, heat a little oil over medium heat, add the chopped onion, chopped garlic and cook until tender and fragrant.

Add the cooked potatoes, cumin, chili powder, salt and pepper, cook together for about 5 minutes, lightly mash some potatoes with a fork to give texture.

Place about 2 tablespoons of the potato mixture in the center of each tortilla.

Roll up each tortilla and secure it with a toothpick at the end so it doesn’t split open when frying.

In a large skillet, heat enough vegetable oil to submerge the tacos.

When the oil is hot (approximately 180° C or 350° F), add the browned tacos.

Fry until golden brown and crispy.

Remove the browned tacos with a skimmer and place them on absorbent paper towels to remove excess oil.

Serve the potato tacos dorados with chopped lettuce, tomato, grated cheese, sour cream and sauces to taste.
