Naturasol Honey Muffins with Strawberry

It is a simple recipe that gives you 6 to 9 muffins, depending on the amount of strawberries you put in. It is ideal for a small family or when not everyone likes this type of preparation.

Ingredientes

  • 1 cup flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon (optional)
  • 50 g unsalted butter
  • ¼ cup Naturasol® bee honey
  • 1 egg
  • ¼ cup plain yogurt
  • 1 teaspoon vanilla
  • 1 – 1 ½ cups strawberries (or any other fruit)
  • 1 tablespoon sugar

Preparation

  1. Preheat oven to 375°F/190°C.
  2. Place baking liners in the muffin pans or, if not using liners, grease the pans well.
  3.  In a bowl sift the flour together with the baking powder, salt and cinnamon. Set aside.
  4.  In a bowl beat the butter with the honey until the mixture is creamy.
  5. Add the egg and beat until well blended.
  6. Add the yogurt and honey and beat. If the dough is cut, add a spoonful of the dry ingredients already sifted.
  7. Add the dry ingredients and mix until well blended.
  8. Add the blackberries (or whatever berry you are using) and mix with a spatula.
  9. Divide the batter into muffin tins and sprinkle with cinnamon.
  10. Bake for 20 to 25 minutes, until golden brown and a tester comes out clean.
  11. Remove from the oven, let stand for 5 minutes and turn out onto a wire rack to cool.
